Vegetarian recipes (15 tab / yogic awakening)

Breakfast can be light or hearty, according to each one's needs, but should never ignore it. We give you two full proposals: Apple Muesli and orange couscous.

Muesli

Apple muesli

A quick and easy recipe for when you are in a hurry. For 4-6 persons

Ingredients:

50 g raisins

150 ml of unsweetened Apple juice

2 apples, chopped without hearts

250 g of oat flakes

1 tablespoon honey

25 g of almonds

milk, soy to serve yogurt

Preparation:

  1. Let Soak raisins in Apple juice for 20 minutes. Put apples cut into pieces in a bowl, add the raisins and Apple juice, mix well.
  2. Add the oatmeal and honey. Add the almonds and stir to get a homogeneous mixture. Serve immediately with milk, yogurt or soy milk.

Orange couscous

To start the day in a different way, try this dish instead of the usual porridge. Fresh peaches or apricots can be used in summer. For 4-6 persons

Ingredients:

12 Dried apricots, cut into thin slices

500 ml of orange juice

¼ teaspoon of salt

175 g of couscous

3 tablespoons of grated fresh coconut or toasted dried coconut

1 orange, peeled and broken off to serve (optional)

Preparation:

  1. Put apricots, juice and salt in a saucepan and bring to a boil. Add the couscous and remove from heat. Cover the Pan and let stand for 5 minutes, until the liquid is absorbed by the couscous. This should be a little thick and fluffy and you should feel the grain with teeth.
  2. Put it in individual bowls. Garnish each serving with a little toasted coconut and orange segments, if desired. Serve hot.
